With the CEs returning, and now we have a better idea of what they will be reprinting... Does anyone know which graphic novels you would recommend/people should check out to get the conclusions to storylines that where left incomplete when the CEs ended last year? Or recommended reading to fill the gaps between the previous CEs and where the new ones will pick up? For me, most notably Essential X-Men and Avengers Universe ended without their stories concluding, so would be good to know which graphic novels to get to read the conclusions.

Yes that is really helpful - thank you! I'm the opposite in a way - don't really keep track of what is happening in US and always relied on curated nature of CE's!

For the most part, considering what the CE's are collecting and where they are picking up from, you should be fine.
In terms of Amazing, there isn't a gap between where they finished and where they will relaunch. For X-Men, I believe they are skipping out on the whole 'Age of X' relaunch. Honestly, from what I can gather, it wasn't popular with folks and was just there as filler for Hickman's run. If you want to know what it is however, it'll be the X-Men disassembled arc and then Rosenberg's run afterwards.
For Avengers, you have 'The Final Host' which kick-starts Jason Aaron's run (I'm going to be honest, I don't like his run all that much).
Considering I don't know if they will reprint it, I recommend Silver Surfer Black, not only is it just a good comic, but it also has story threads that continue in Donny Cates' Thor and Venom runs.
I also don't know if they will reprint Thor, honestly, it's really good, but it isn't grabbing me as much as other books out at the moment.
For Events, there's Infinity Countdown and infinity wars which aren't that good Honestly. There's also War of the Realms (I don't know if this was reprinted, but it seems odd for the CE's not to as it is essentially the pay off for Jason Aaron's Thor run). I don't know if they will reprint this after Empyre however, as even through it takes place before, it doesn't have any relation. Not only that, but Venom has a few tie in issues to War of the Realms too. They aren't written by Cates however and don't really have much bearing on the rest of his run (outside of paying off a side plot from the first arc).
There was also 'Return of Wolverine' which just brings Wolverine back. That mini series also has a sequel mini series of sorts with 'Wolverine: Infinity Watch' which is also an epilogue to Infinity Wars (it's better if you ask me).
I'll say you can pretty much skip all of it however when it comes to Hickman, HOXPOX feels more like a soft reboot and spiritual successor to Morrison's X-Men run more than anything.
Also Friendly neighborhood Spider-man is two trades and has a plot with Aunt May. The book isn't needed, but it's just kind of fun if you want to see Spider-man in a more 'Personal' setting. I hope all this helps by the way.
